Ultimate Gourmet Grilled Cheese Sandwich

The ultimate grilled cheese sandwich created by chef David Omar, just in time for back to school!


 

Everyone loves a good grilled cheese sandwich. Add in focaccia bread, roma tomatos and a balsamic reduction and it really can't be beat!

Ingredients

1 piece herbed focaccia bread

2 tbsp (30 mL) butter, softened

1 tbsp (15 mL) basil pesto

1 slice (75 g) Armstrong Marble Cheddar

 

1 slice (75 g) Armstrong Old Cheddar

3 slices roma tomato

¼ tsp (1 mL) balsamic reduction, store-bought or homemade (recipe below)

4 leaves arugula, torn (or fresh spinach)

¼ tsp (1 mL) lemon vinaigrette (recipe below)

Balsamic reduction

1 cup (250 mL) balsamic vinegar

1 tbsp (15 mL) white sugar

Directions: Simmer balsamic vinegar in a pot with sugar until it has the consistency of maple syrup.

Lemon vinaigrette

1 cup (250 mL) olive oil

2 lemons, freshly squeezed

Pinch sea salt

Pinch white pepper

1 tsp (5 mL) honey

1 tsp (5 mL) chopped chives

Directions: Combine all ingredients in a container, shake together and chill for 30 minutes, until ready to use.

Directions

1. Heat frying pan on stove over medium-high heat.

2. Cut the focaccia horizontally in half. Whip butter with basil pesto and evenly spread 1 tbsp (15 mL) on the cut side of each piece of bread (½ tbsp (7 mL) on each piece).

3. Place both pieces of bread in the hot pan, butter side down, and place one piece of cheese on top of each.

4. After approximately 2 to 3 minutes, check the sides of the bread for sizzling by lifting the edges with a rubber spatula. Once sizzling, add the tomato slices and drizzle lightly with balsamic reduction – a little goes a long way.

5. In a separate bowl, toss arugula with lemon vinaigrette, then place in the centre of one piece of bread. Flip the other piece on top of the arugula to complete the sandwich, and allow to cook for 1 more minute.  Remove from heat and serve immediately.

Cooking Tips: For a little variety, try serving this sandwich open faced, with the arugula dressed and placed on top just before serving. You can also customize this recipe with your favourite Armstrong cheese combinations, or by changing up the tomatoes and types of bread to add to your love of grilled cheese.
