Whenever Thai food is mentioned, those with nut allergies are immediately scared. Both the marinade and dipping sauce have lots of Asian overtones and make a superb entertaining dish when served with rice pancakes.

Thai curry paste helps give this dish authentic heat, but you could also use Asian chilli sauce or even hot pepper sauce. Typically a peanut sauce would accompany this type of dish, but instead a thick hoisin sauce adds a flavourful punch.



1 1⁄2 pound (750 g) pork tenderloin


2 tbsp (30 mL) fish sauce

1 tsp (5 mL) sugar

2 tbsp (30 mL) lime juice

1 tsp (5 mL) chopped garlic

1 tsp (5 mL) chopped ginger

1⁄2 tsp (2 mL) Thai red curry paste

2 tbsp (30 mL) vegetable oil

Dipping Sauce:

1⁄2 cup (125 mL) hoisin sauce

1 tsp (5 mL) grated ginger

2 tbsp (30 mL) rice vinegar

1 tsp (5 mL) grated lime rind

10 lemongrass or other skewers


Lemongrass skewers: Cut 6-inch pieces of lemongrass from the pointy end, reserving the bulbs for another use. Use the whole top or if thick, cut in half lengthwise, depending on thickness, This imparts a nice hint of lemongrass flavour to the pork. You can substitute soaked wooden skewers if desired.

Cut pork into 1 inch (2.5 cm) cubes. Combine fish sauce, sugar, lime juice, garlic, ginger and Thai curry paste in a large bowl. Stir in oil. Add pork cubes and marinate for 1 hour at room temperature or up to 12 hours refrigerated.

Combine hoisin sauce, ginger, rice vinegar and lime rind until smooth. Reserve.

Preheat grill to high.

Place 3 pork cubes on each lemongrass skewer. Grill pork for about 2 to 3 minutes per side, 8 to 12 minutes in total, or until pork has a tinge of pink in the centre. Serve pork with dipping sauce on top of the Rice Pancakes (recipe below).

Makes about 10 skewers, Serves 4


These pancakes can be delicate, but if they break don’t worry, they still taste excellent! To use as pancake substitutes for breakfast, remove the turmeric and vinegar and serve with maple syrup.


1 cup (250 mL) rice flour

1⁄4 cup (50 mL) all-purpose flour

1⁄2 tsp (2 mL) turmeric

1 tsp (5 mL) kosher salt

1⁄4 cup (50 mL) coconut milk

1 tbsp (15 mL) rice vinegar

1 1/4 cups (300 mL) cold water

1 cup (250 mL) slivered green onions

1 tsp (5 mL) chopped jalapeno pepper

2 cups (500 mL) bean sprouts

2 tbsp (30 mL) vegetable oil


Combine rice flour, all purpose flour, turmeric, salt, coconut milk, rice vinegar and cold water in a bowl. Stir in green onions, jalapenos and bean sprouts.

Heat 1 tsp (5 mL) oil in a non-stick pan over medium heat.

Place about 1/3 cup (60 mL) batter in skillet and use a spatula to spread and flatten it to about a 6-inch (15 cm) circle.

Cook for 2 minutes per side or until pale brown and cooked through. Repeat with remaining batter using more oil as needed.

Makes about 10 pancakes
